Fresh strawberry fruit bars
Oh my gosh - YUM! With so many strawberries around, I had to start looking for ways to eat ‘em up, so I turned to my favorite - foodgawker.com. Inspired by this recipe (thanks, Jane!), I ordered a popsicle maker (see link below) and made this recipe:
2-4 cups fresh strawberries
1/4 cup vanilla (or plain) yogurt
1-2 teaspoons sugar
Popsicle sticks
Before you begin, soak your popsicle sticks in a glass of water. In a food processor, puree the strawberries leaving 1/2-1 cup in small chopped pieces. Add the yogurt and sugar. Spoon the mixture into the popsicle mold, adding the strawberry pieces every so often throughout. Be sure to leave a small area at the top so the mixture doesn’t spill over when you put the sticks in. Place the lid on top and then gently insert the popsicle sticks, leaving enough left outside of the popsicle to allow hands to grip the fruit bar (I learned the hard way - the picture below has them pushed too far in). Put in freezer for a couple hours (or overnight), pull out and enjoy!
